Beautiful red beets and their dense greens do amazing things – all you need is one medium beet 2-3 times per week to get all these benefits:

Put these ingredients into your juicer in the following order (wash well and leave the peels on) and enjoy once a week for excellent blood detox results!
- 1″ piece of ginger
- 1 medium beet
- 3 carrots
- 3 stalks celery
- 1/2 lemon
- 1 large apple
Or roast it in the oven at 350 degrees Fahrenheit for an hour (less for smaller beets) and peel it when cool. Chop it up and add it to a salad, like my Beet Salad. The greens can be chopped and sauteed lightly with 1/2 cup chopped onion in 1 tablespoon olive oil. Add salt and a squeeze of fresh lemon juice. This tastes great next to whole grains, like Tomato Bulgur Wheat Pilaf.
