INGREDIENTS

Organic cooking oil spray

24 wonton squares

2 cups organic ricotta cheese

1/4 cup + 2 tablespoons grated Parmigiano-Reggiano

1/2 cup grated mozzarella cheese

5 fresh basil leaves, torn

Simple Marinara sauce (recipe below)

 

DIRECTIONS

STEP ONE: READY THE RICOTTA

In a bowl, combine ricotta, Parmigiano-Reggiano, and basil, then season with salt and pepper. Set aside.

STEP TWO: FIRST LAYER

Spray the mini-mun pan with cooking oil. Press one wonton square into the bottom of each cup. Note: traditional lasagna pasta sheets don’t work well in this recipe, and the wontons taste just like the original when they’re baked.

Place a spoonful of ricotta filling into each cup and pat it down to spread evenly to the sides.

Top with another wonton square and press gently to let out any air bubbles. Then add a generous spoonful of marinara sauce to fill the cup.

Top each lasagna with mozzarella cheese and a sprinkling of Parmigiano- Reggiano.

STEP SIX: TO THE OVEN

Bake at 350 °F until the edges of the wontons are light golden brown and the cheese ha melted. Let cool 5-10 minutes before removing from the pan to serve.

Simple Marinara

INGREDIENTS

1 tablespoon organic extra virgin olive oil

1/2 small onion, chopped

1 clove garlic, diced

1/2 jar organic crushed tomatoes

5 fresh basil leaves, torn

Red pepper flakes (optional)

Sea salt

Freshly ground pepper

Sauté the onion and garlic in olive oil until soft, then add tomatoes and simmer for 10 minutes until the sauce thickens slightly. Season with salt, pepper, and red pepper flakes (if desired), and mix in the basil. Make ahead and set aside.
