1 15-ounce BPA-free can organic chickpeas
1/2 clove garlic, crushed (adjust amount to taste)
2 tablespoons tahini
Juice of half a lemon
1 tablespoon organic extra virgin olive oil
1 tablespoon ground cumin
Sea salt, to taste
STEP ONE: SMOOTH OPERATOR Combine all ingredients in a food processor and mix until smooth.
STEP TWO: FIRST IMPRESSIONS Transfer to a serving dish and make an impression in the center by pressing lightly with the back of a spoon while you turn the dish. This will leave a place to pour in a tablespoon of olive oil for garnish. Sprinkle with more cumin, and serve with warm pita bread.
